Ours are leavened with a wild yeast starter we have been feeding for years, not commercial yeast. That is the whole difference, and it shows up in three places.

The fermentation runs long, which builds an irregular open crumb through the interior of the muffin. Those are the real nooks and crannies, the ones you can see when you fork-split one, not a texture pressed into the surface. The same fermentation produces lactic acid, which is where the tang comes from. And the crust comes out with more chew and a little resistance when you bite in.

We make them in small batches rather than one large morning run, which is what lets us keep them coming out through the day rather than baking everything at 5am and letting it sit. Nothing is shipped in par-baked or finished from frozen.
